Banana Praline Muffins
These banana praline masterpieces from Abbeymoore Manor Bed & Breakfast Inn have absolutely everything you could want in a muffin! They are moist, rich, soft & delightfully crispy on the outside. They can be served up as a quick breakfast or a yummy snack & can be guaranteed to please friends & family members.
3 tbsp brown sugar
1 tbsp sour cream
½ cup broken pecans
½ cup sugar
¼ cup oil
1 ¼ cup flour
2 tsp baking powder
¼ tsp salt
Preheat oven to 400
Topping - In a small mixing bowl mix together the brown sugar, sour cream and pecans and set aside.
Batter - In a large bowl mash the bananas, add the egg, sugar and oil and beat well. In separate bowl or big measuring cup mix flour, baking powder and salt. Add the dry ingredients to the banana mixture and stir until moistened.
Spoon the batter into greased muffin tins and top with a spoonful of the pecan topping mixture.
Bake at 400 for 15 minutes and serve warm.
Makes 12 delicious medium sized muffinsthat are best served warm (do not freeze).
