White House Scones

Bake scones fit for a President with this easy and adaptable recipe from Portland's White House.


  • 3 cups flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp kosher or coarse salt
  • 8 tblsp butter (1 stick)
  • 1 cup vegetable shortening
  • 2 cups oatmeal
  • 1 cup buttermilk
  • 1/2 cup sugar
  • Any combination of or all: 1/2 cup raisins, 1/2 cup crystallized ginger, 1/2 cup diced apples, 1/2 cup diced pears, 1/2 cup diced peaches, 1/2 cup toasted walnuts


In a medium bowl, thoroughly mix flour, baking soda, baking powder, salt and sugar. Then work in the butter and shortening with pastry knives or with hands until the mixture has the texture of oatmeal. Stir in the oats and any of the nuts and fruits you choose. Add buttermilk, mixing just enough to moisten. Cut into two sections. Turn out onto floured surface and knead lightly for 7-8 turns.
Pat the dough out into a circle about 7-8 inches in diameter. Cut into 8-10 equal wedges. Sprinkle with sugar. Bake on ungreased cookie sheet in preheated to 400 for 15-20 minutes
